Fred

French Bread


Combine and whisk together:
2 packets of yeast
2 cups warm water
1 tsp sugar
2 tsp salt
1 Tbsp flour







Add 4 1/2 cups of bread flour. Mix. Continue to add 1/2 cups of flour until the dough begins to form a ball.

Knead air bubbles out of dough. Add small amounts of flour until dough is no longer sticky. Cover. Let rise until double in size for roughly 30 minutes.

Shape into two equal-sized loaves. Dust a cookie sheet with flour and place loaves. Let rise again for 20 minutes.

Brush with water and salt. Preheat oven to 400* F. Fill a small pan with water and place under the sheet during baking. The steam that will be produced will form a french bread crust.

Bake for 20 minutes, or until golden.
